Hi Bev, I would need to test the bake time and would salt them and pat dry to draw out the moisture. It would require some testing for it to turn out right. If you do experiment with adding them, please share the results.

Can I use strips of zucchini in place of the lasagna?
Thank you.

Hi Kathy, the 9×9 pan I use for this is quite deep, and I have had other commenters share that this recipe worked equally well in a 9×13 pan.

We love this recipe!!!
I would like to make a 9×13 pan. Any suggestion on how to convert the ingredient amounts for a 9×13 pan?
Thanks,
Kathy

Hi Donna, you can cook the vegetables a day or two in advance.

I’m making your Best Vegan Lasagna recipe for Thanksgiving and I’m wondering if I can make the vegetables in advance. If so, how far in advance is acceptable? Thanks so much for your help.

I haven’t tried it with this recipe but raw sunflower seeds are usually a fantastic replacement for cashews. I’d try that!

Thank you, Kate! I’m going for the Palmini lasagna noodles. I figure with all the delicious veggies, cashew cheese, and red sauce, the pasta noodles won’t be missed. I’ll report back! Happy Thanksgiving!

Hi Deb, yes you could assemble a day ahead and keep in the refrigerator before baking the next day. If you have room in your freezer and want to make it further ahead, it can also be frozen, then defrosted overnight in the refrigerator before baking.
