My spouse thought it lacked some depth of flavor, even though the recipe should have certainly built the flavor profile during cooking. Also, the tofu never browned.
We served this over rice with a large helping of side vegetables too, and it was just enough for 2 people.

Hi Karen, I prefer the tofu freshly cooked, but it can be refrigerated for a day or two. I prefer it reheated in the oven or toaster oven to crisp it up. I don’t recommend freezing.

Directions were perfect. Love the melding of flavors and textures. 2 Tbsp of chopped chipotle peppers was the perfect amount of slightly delayed heat. I added a dash of black pepper along with salt to taste. To disguise the tofu to my meatloving husband, I also added some scrambled eggs crumbled along with tofu. Fun to serve with sour cream, avocado, guacamole. I mixed in corn kernels, fresh chopped tomatoes, and black beans to extend the leftovers for a 2nd hearty meal. Loved this as we consume less meat since chickens, cattle, pigs are too often raised/ transported under inhumane conditions and slaughtered in fear/pain.
