I was worried it’d be too much liquid (I forgot to squeeze any liquid out of the apples) but it thickened a bit after sitting; batter was still a little runny when I put it in the pan but cooked up perfectly. My toddler enjoyed them too!

I doubled the cinnamon, would do that again, didn’t feel like it was too much. Also added a dash of cardamom but next time would try a proper 1/4 tsp of cardamom. Ginger would also probably taste great in here.

I used coarsely grated apples for almost the full cup and finely grated for the rest, next time would just do coarsely grated for all. Left the peel on and that was totally fine.

Very easy to put together, but do remember to squeeze some of the liquid out of the grated apple. It doesn’t have to be extremely dry, but there’s a lot of liquid in an apple. Making smaller pancakes helped the cooking time and they cooked more evenly. Larger/thicker pancakes took some time to cook through so you might have to play with the temp. Five stars!

I’d had a hard time finding white whole wheat flour, saw the golden at Whole Foods then looked online. Apparently, the “white” made the flour seem processed, so they changed the name. Since your recipes introduced me to white whole wheat flour (thanks!) , I thought I’d mention it.
