The chickpeas were bone dry when they went into the oven. The oven thermometer was right at 400 degrees. Roasted for the recommended time. Yet the finished product was still quite soft – not anywhere near crispy. I can still use the chickpeas for another recipe buy am not sure why they did not turn out better here. Perhaps I will try again!?

I have never had roasted chickpeas this crisp before. We used some Trader Joe’s Ranch seasoning and good olive oil and I am hooked. The tips were “game changers”. Can’t wait to make them the next time we make your “perfect” hummus!

They were super crunchy when cooled. After cooling for an hour or so, I put them in a jar but they were no longer crunchy the next day

It’s even yummier than I thought. I didn’t measure the spices but I sprinkled smoked paprika and cumin as well as salt on them, tasted and added a bit more, tasted again, perfect. Don’t think they will last long!
Thanks a million because I’ve had roasted chick peas before that I thought were nice, but these are seriously delicious!
