This is such a delicious recipe! I’ve made it quite a few times for potluck, picnics, new moms. It is so delicious! I always up the lime because I’m a big fan of lime, but the recipe is perfect as written! Double it for potluck if you want any leftovers!

In reply to Kay Stenn. Hi Kay, this salad would freeze better than many bean salads (some ingredients like tomatoes get mushy when defrosting). I would not include the avocado when freezing.

The Cowboy Caviar is wonderful! It makes me want to try more of your recipes.I was looking for hearty and healthy. I got both! Reading the other post I am surprised the difficulty in finding black-eyed peas. They are wonderful and may be in with the dried beans.Thank you! Jane
