Hi Lisa, oil helps muffins stay soft and moist. Butter has water and oil is 100% fat. If you use butter, your muffins will be slightly drier.

I used regular whole wheat flour in these muffins and you can’t taste it and they aren’t super dense, unlike many wheat baked goods. I added some chocolate chips which were the perfect touch. My whole family loved them, and I will definitely make them again! No one could tell they were healthy!
