They are delicious! I used expeller pressed safflower oil instead of coconut oil. What a delight to eat a delicious pumpkin muffin that is sweetened with maple syrup and not with refined sugar. I love the texture that the whole wheat flour gives this muffin, as well. It almost reminds me of a bran muffin, but even better with the tasty pumpkin. Hi La, I don’t find them dense, but they are not quite as light as baked goods made with white flour. I find the nutrition benefits and flavor preferable when using whole wheat pastry flour.
