I loved the black beans in that recipe! I revisited them often. Thanks for linking the old PDF! The egg part of this breakfast are delicious too. This is one of the brunch recipes I come back to over and over. I was glad to read in the intro you enjoyed Austin with your family recently! I don’t know what people in Austin were thinking of but I’m sure they’re doing what other restaurants do, try to embellish and elevate. This doesn’t cut it with Migas. True Migas start with cooking cut up corn tortillas until just crispy, then add onions, tomatoes and dices serrano pepper (depending on how hot you want it). Last you add the eggs and cook until done. You can add cheddar cheese at the end but not necessary.
