Thank you for this recipe! I roasted 16 oz. raw organic cashews from a 3 lb. Costco bag, added 1/4 tsp. salt, and ran in my food processor according to your directions. The longer the processing, the smoother it gets, and it’s soooo good!

You can scale the recipe down to a half-size. You can freeze, but it may impact the texture.

I want to remark that I keep my cashews in the freezer for freshness, so they were definitely not warm, but bought them toasted in bulk from health food store (yeah, organic!). And they blended right up, very fast, no balling up nor overly warm food processor (& I have a cheap model). Just fyi & for other readers. I was only doing about 1/3 cup at a time, so maybe that helped.

I found your recipe after wanting to make the New York Times Roasted Eggplant with Cashew Sauce recipe…now I can, on a budget. Yippee!

I’ve found so many good recipes on your site when I’ve Googled for how to do or make this or that. Thank you for that!
