Do not overcook or they will be dry! After flipping they only need a few seconds on side 2.
I made both 100% buckwheat and the 1/2 and 1/2 recipe. They both worked well. My BF said he couldn’t taste any difference between the 2 recipes.

Hi Eloise, I recommend the recipe as written. If you try to substitute Greek yogurt, please share how it turns out.

I used half fresh milled buckwheat and half kamut flour – next time I will try all buckwheat. We ate them with maple syrup and fresh blueberries – so fluffy and delicious!

I replaced 1/3 of the flour with plain pea protein powder, used egg whites, stevia and used the vegan buttermilk option with your update and they turned out awesome! I appreciate you included the way they are supposed to look and the time per side. That made a huge difference.

Hello, this is a buckwheat flour recipe, not a coconut flour recipe. They are very different flours, and can’t be substituted at a 1:1 ratio.

We used coconut milk instead of buttermilk.
1/4 teaspoon (Local here in Nth Qld) Vanilla Powder instead of extract.
In stove top Stainless Steel Pan, a mixture of coconut oil and non dairy based butter.
So good pan was super clean.

Yes, you can freeze them. Just store in freezer bags.
