Ok, having read your instructions on how to pasteurize eggs, could I then heat the eggs and yolks to 160F using 1/2c of the heavy cream (for the whole eggs) and 1/4c of the sugar (for the yolks)? From there, once they hit 160F, could I then continue in the saucepan, using a whisk and melting the chocolate chips and then adding the rest of the ingredients?

I mistakenly bought half and half instead of heavy cream. My pots are runny instead of more solid! And they have been in the fridge for almost 4 hours. Can I freeze them for a bit? Or should I simply start over?
