In reply to Elena. Hi Elena, microwaving won't get the same caramelized flavor, and not everyone has a microwave. If you need to make that adjustment you certainly can.

In reply to Cookie and Kate. Roasting the squash for up to 60 min in the oven seems like an abysmal energy waste, given it will be mashed and mixed with water. Microwaving it seems more practical.

What an interesting and innovative approach to mac and cheese. I made a non-dairy vegan version with gluten free pasta and vegan chesses for Thanksgiving and it was a hit. Delicious! Can’t wait to try it as written when I am not accommodating the nondairy and non gluten needs of realtives, but it was very good even with the substitutions.

This recipe was SO good! We were skeptical at first because of the boiling in the squash, but we trust the process. My brother said it was “the best mac he’s had” and was worried we would mess it up when adding some more liquid to make it thinner. Once we added 1/4 cup whole milk and 1/4 cup chicken broth, it became even better, and he was even happier :) Look forward to making this again for our post-Thanksgiving Thanksgiving!!

If anyone is wondering: it can be traveled through TSA in the carry-on. Great for the college kiddos

So good!! I made this for Meatless Monday with a side of Brussels sprouts and peas. Triple veggie meal. Followed the recipe as written, only modified with extra squash as it was easier to use all I roasted. I’ll definitely make this again.

Dear Cookie and Kate,
Thank you very much for this recipe! The boyfriend prefers it to regular mac-and-cheese and calls it “The Good Macaroni.” I have tried so many macaroni recipes without success to achieve this texture. It’s the nutrition I require and the flavor I desire! 10/10

No leftovers! They didn’t even suspect it had squash in it! Fantastic recipe. I was leary of the one pot method but it worked beautifully.
