I normally don’t make anything with pasta for lunch, but this recipe doesn’t actually have a ton of pasta in it since you have the beans and veggies to bulk it up. Felt like a delicious, decadent lunch to take to work. I did reduce the water by about 3/4 cup to make it a little more concentrated, and I was happy with that choice.

I added in fresh thyme, chunks of potato, zucchini, extra carrots and celery, and some Aleppo pepper instead of red pepper flakes for a subtler heat. Will absolutely make this again!
