Hi Kate. I had underestimate how much shredded coconut I had and so decided to substitute half with coconut flour. Of course it was too dry so I then added the egg yolks and pressed the dough into shape. Voila! A new creation and they are so light and tender. Amazing. No harm in substituting but you do create something quite different from the original idea. That is what I love about cooking! Always surprising and sometimes dissappointing. In this case it turned out well.

I do enjoy all of your recipes and love your take on making all your dished appetising and more healthy. Congratulations. And Merry Christmas, Happy Holidays.

Gave these a try which were easy to put together my problem was they stuck to the pan and did not come off the parchment paper very well. Not sure what I did wrong but would like to try again. I have been baking for 60+ years.
