Hi Peg, yes you should cook the canned chickpeas with baking soda. The overcooked beans yields creamy hummus.

The flavour is delicious and it was very smooth, but it was more like a sauce. I wonder if more than 1 can of chickpeas is necessary? After boiling them for 20 min, there was a very scant amount left.

I’ve been making hummus all my life. I’m up Lebanese descent and I’m 72 years old my mother always made it but this is by far the best recipe I’ve ever had mine was never real smooth and creamy and I’ve tried a little tricks but this did it all I’m so happy about it!
